330g pack of fresh Hogan’s Farm turkey stir-fry strips.
1 red onion thinly sliced
1 red and 1 green pepper, cored and thinly sliced
½ punnet of mushrooms sliced.
Fajita Seasoning.
6 tortilla wraps
Sour cream
Fajita Seasoning – From the cupboard:
1 tbsp of cornstarch.
2 tsp of chilli powder / dried flakes.
1tsp of: Salt,paprika and white sugar.
½ tsp of; onion and garlic powder and ground cumin.
½ tsp of cayenne powder (optional)
Mix in together in a bowl – Homemade fajita seasoning .
Hint: store dry in air tight container for future use .
Add ¼ cup of water into the mix to complete the seasoning for cooking.
Cooks in approx: 15 minutes.
On a non-stick pan, pre-heat the oil on a medium to high heat.
Add in onions , mushrooms and peppers and sàute , stirring until softened.
Remove from pan and leave to one side.
Add in the turkey strips and pour over and mix in the Fajita seasoning.
Cook and stir for approx. 8-mins until turkey is cooked and pour in vegetable mix prepared already for another 2 minutes.
To serve:
Pour mixture into tortilla wraps with a spoon of sour cream.
Add a sprinkle of cheese or guacamole if desired.
Roll over wrap & enjoy.
