Winter Turkey Salad
Warm Pasta Salad using Hogan's Farm Diced Turkey Breast


  • 2 cloves of garlic
  • A few sprigs of fresh thyme
  • 300g of wild mushrooms
  • 330g of Hogan’s Farm Diced Turkey Breast
  • 500g of Penne Pasta
  • Olive oil
  • 3 tbsp of crème fraiche
  • 200g of spinach
  • Parmsan Cheese
  • Juice of 1 lemon

  • Cook the pasta  in lightly salted boiling water as per pack instructions
  • While Pasta is cooking , with a little olive oil, heat a large pan and add in the diced turkey breast Cook for approx. 5 minutes
  • Then while continuing to cook the turkey, peel and finely slice the garlic, roughly chop the mushrooms, pick off the thyme leaves
  • Add the garlic to the turkey and cook until garlic turns golden brown ( approx. 1 min,)  then Add the thyme, mushrooms and season with salt & pepper  and cook for further  10 mins approx
  • Stir in the crème fraiche and remove pan from the heat
  • Drain the pasta once cooked – saving a mugful of the pasta water. Let it cool slightly
  • Toss the pasta with a little olive oil and stir in the sauce from the pan. Add a little of the pasta water to loosen if needed
  • Stir in the spinach and add in grated parmesan cheese. Squeeze in the lemon juice and season to taste.
